Veggies

Quick & delicious green veggie with dinner: saute organic spinach in a little olive oil & garlic. At the very end of the cooking (which isn't long) toss in some chickpeas! Cook for another minute or two. YUM!!!

Quick & easy is key!  What ideas can you share?

  1. OK, here's another: Mashed cauliflower. Steam or boil the cauliflower until it's soft enough that you can mash it with a hand masher or fork. Drain. Mash. Add just a touch of butter & sea salt. Delicious! (but gassy!) LOL
